As the Christmas season is approaching, we know your calendars are filling up with parties and get-togethers. Thinking about what to bring? We have a wonderful potato casserole that will leave everyone wanting more!
Ingredients:
- 2 cans (10 ¾ ounces each) cream of celery soup
- 1 carton (8 ounces) dairy sour cream or unflavored yogurt
- 1 medium onion, chopped
- 1 green pepper, chopped
- 3 tbsp diced pimento
- 2 tsp salt
- 1/8 tsp pepper
- 1 bag (32 ounces) frozen hash brown potatoes or 8 cups of cubed potatoes
- ¼ cup grated Parmesan cheese
Directions:
Preheat oven to 325 degrees Fahrenheit.
Mix all of the ingredients except the potatoes and Parmesan cheese. Stir in potatoes.
Spread in an ungreased baking dish (13x9x2 inches) or a 3-quart casserole. Sprinkle with parmesan cheese.
Cover and cook for about 1 hour. Uncover and cook for 30 minutes, or until potatoes are tender. Sprinkle with paprika.
