Party food 101: Party Potato Casserole

As the Christmas season is approaching, we know your calendars are filling up with parties and get-togethers. Thinking about what to bring? We have a wonderful potato casserole that will leave everyone wanting more!

Ingredients:

  • 2 cans (10 ¾ ounces each) cream of celery soup
  • 1 carton (8 ounces) dairy sour cream or unflavored yogurt
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 3 tbsp diced pimento
  • 2 tsp salt
  • 1/8 tsp pepper
  • 1 bag (32 ounces) frozen hash brown potatoes or 8 cups of cubed potatoes
  • ¼ cup grated Parmesan cheese

 

Directions:

Preheat oven to 325 degrees Fahrenheit.

Mix all of the ingredients except the potatoes and Parmesan cheese. Stir in potatoes.

Spread in an ungreased baking dish (13x9x2 inches) or a 3-quart casserole. Sprinkle with parmesan cheese.

Cover and cook for about 1 hour. Uncover and cook for 30 minutes, or until potatoes are tender. Sprinkle with paprika.
