This cold dessert is a version of plantain pudding popular in Latin America. It is a perfect dish for when you need to quickly whip something up or are craving something sweet. 

Ingredients: 

  • 6 ripe plantains
  • 2 egg whites 
  • Sweet Sherry 
  • Butter
  • Sugar 
  • 40 grams of nuts such as pecans or walnuts
  • Shredded coconut (optional)

Directions: 

Peel and slice the plantain into 1 cm rounds. 

Spread a little bit of butter in several small glasses, which will be used to serve the dish. Place the sliced plantains at the bottom of the glass, covering its base. 

Add a little bit of sugar and pour a teaspoon of Sherry. Cover with another layer of plantains and repeat the process. 

For the meringue, whisk two egg whites. Slowly add 3 teaspoons of sugar, and keep whisking until it reaches your desired texture. This process is easier with an electric mixer. 

Add the meringue to the glass of plantains. Sprinkle some crushed nuts on top for decoration. Top with coconut shreds.
