While many Latin American and Caribbean countries have their own dishes with yuca, this mouth-watering recipe follows the traditional dishes from El Salvador, Honduras, and Guatemala.
Ingredients:
- 4 Yuca
- Homemade tomato sauce (recipe below)
- Pork Rinds
- 5 Garlic clove
- 2 Onions
- 1 Cucumber
- 1 Radish
- Watercress
- 6 Tomatoes, sliced
- Cabbage, sliced
- Bell pepper
- Oregano
- Water
Serves 2
Directions:
For Yucca:
Wash and peel the yuca. Cut the yuca into smaller pieces. Place the yuca in a saucepan with enough water to cover it. Add 1 sliced onion and 1 garlic clove to the pot and bring to a boil. Once the yuca is tender, remove ingredients from the water. Transfer the yucca to a bowl and mash, leaving big pieces if preferred.
For Sauce:
In a saucepan, boil 5 tomatoes, sliced onion, 4 garlic cloves, oregano, a pinch of salt, and a splash of water.
Once cooked, blend the ingredients until a sauce if formed.
Heat olive oil in a pan. Add the sauce and cook for 1-2 minutes.
Serving
Once the yuca and the sauce are ready, add the yucca puree to a bowl. Top it with tomato sauce.
Crush pork rinds and add on top of the bowl. Top with watercress, cubed radish, cubed tomatoes, and sliced cabbage.
