New fall favorite: Sweet potato cookies
Trends come and go, but these maple-glazed sweet potato cookies are here to stay.
This easy-to-make fall recipe will add variety to the season’s staple treats.
Instructions
Preheat oven to 375 degrees Fahrenheit. Line two baking sheets with parchment paper
In a bowl, whisk together the flour, baking soda, cinnamon, salt, and nutmeg.
Using a hand mixer, mix the butter, brown sugar, and white sugar until fluffy. Add the sweet potato puree, egg, and vanilla. Beat the ingredients together. Add the mixture of dry ingredients and mix until blended. Add the chopped pecans.
With a spoon, scoops balls of the mixture onto the baking sheet, setting them a few inches apart so they can expand.
Place the baking sheets in the oven and bake the cookies for 10 minutes or until golden. Remove from the oven and let the cookies cool completely.
While the cookies cool off, make the maple glaze by stirring together powdered sugar, syrup, milk, and a pinch of salt.
When the cookies are completely cool, drizzle the glaze on top of them and top them with chopped pecans.
