Craving Peruvian food but don’t want to cook something too complicated? Search no more. Lomo Saltado gives you all that Peruvian flavor with very little effort. All you need is a good cut of steak, fresh veggies, and rice. This flavorful dish will leave you wanting more.  

 

Ingredients: 

  • 1lb Sirloin steak, cut into strips (or your steak of preference)
  • 2 tomatoes, chopped 
  • 1 red onion, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil 
  • 1 tbsp aji amarillo
  • White rice, cooked 
  • ½ cup beef stock 
  • 4 tbsp soy sauce 
  • 2 tbsp White vinegar
  • 1 tsp black pepper 
  • 1 tsp cumin
  • ¼ tsp oregano 
  • 1 lb potatoes, sliced
  • Salt

Directions: 

Heat a pan with vegetable oil. Fry the potato slices and set aside. 

Marinate the steak in cumin, salt, vinegar, 1 tbsp olive oil, black pepper, and soy sauce for about 10 minutes. 

Heat the remaining olive oil in a wok or pan on high heat. Strain the steak and fry it for about 4 to 5 minutes, making sure all sides are cooked. 

To the beef, add the aji amarillo, and garlic. Fry for 1 minute, constantly moving the ingredients. Add the beef stock. 

Add the tomato and the onion and cook for about 2 minutes. Add the oregano and the fried potato slices and oregano. Mix all of the ingredients. 

Serve with rice.
